The Geometry of the Fold: A Conversation with Master Li
Master Li has been folding Har Gows since many of our guests were children. To him, point-and-fold is a form of high mathematics combined with artisanal soul.
Q: They say a Har Gow must have exactly 13 pleats. Is this true?
"Thirteen is the standard for symmetry, but the soul is in the tension of the dough. It must be translucent enough to tease the color of the shrimp, yet strong enough to hold the steam. This is the geometry we master every morning at 4 AM."
"A perfect dumpling is a silent conversation between the master and the guest."
Crafting the Future
"In our kitchens across Markham and Scarborough, we teach the next generation that there are no shortcuts. You cannot rush the fold. You cannot compromise the steam. That is why our dim sum remains the gold standard in the GTA."
