Engineering the Perfect Siu Mai (Shu Mai)

A perfect Siu Mai is defined by its 'snap.' At Congee Queen, our dim sum artisans enforce a strict 70:30 ratio of lean pork shoulder to hand-minced shrimp. The pork is massaged to build myosin, creating a resilient, springy texture that binds without heavy starches. We use fresh Shiitake mushrooms for umami depth and a hint of white pepper for back-of-the-throat warmth. Each dumpling is hand-wrapped in a thin alkaline skin that must hold its structural integrity during the high-pressure 7-minute steam cycle.
