The Perfect Char Siu: The Intersection of Honey and Heat

At Congee Queen, Char Siu is a science of layered heat. We start with premium 'Pork Collar' for the ideal fat-to-lean marbling. The marinade is a heritage blend of fermented bean curd, five-spice, and a specific grade of maltose that provides the 'Crystalline Snap'.

The Roasting Protocol

The meat is roasted in vertical ovens, allowing the fat to render and baste the meat naturally. In the final stage, we apply a high-heat 'flash sear' to caramelize the honey-glaze, creating the signature charred edges known as 'Burnt Ends'. This creates a dual-texture experience: a crispy, sweet exterior following by a tender, savory interior.

Every slice must be cut to exactly 1cm thickness to ensure the optimal surface-area-to-flavor ratio. It's this technical focus that makes our BBQ station the gold standard.
